Feel free to scale up or down as desired. This can easily be made a couple of hours (or more) ahead of time. Make sure you keep the mixture in the fridge until you are ready, and please don’t dilute it by adding the ice too early. Literally add it as your guests ring the bell and make sure you have enough ice for the glasses too.
Ingredients
- 1kg watermelon (approx)
- 2 tbs sugar (increase or decrease depending on the sweetness of your melon)
- juice of 4 limes
- 250ml Gin
- 250ml Campari
- Sparking water to top up
- Mint sprigs to garnish
- Plenty of ice
- Start by making the watermelon base. Cut in to cubes and place in the jar of a blender. Add the sugar and the lime juice and blitz until smooth.
- I like to sieve my watermelon juice before pouring it into a jug. Add the Gin & Campari and stir around to muddle the liquids. If you are serving immediately, fill the jug with as much ice as you can as you really want this to be cold, otherwise keep it in the fridge until you are ready to serve and add the ice then.
- To serve, fill your glasses with ice and pour over a generous serving, leaving room to top up to your taste with sparkling water. Garnish with a mint leave, sit back and enjoy the summer evening
